Over the course of a year, the critics visit the restaurant several times to check the consistency of the cuisine. They remain anonymous and pretend to be normal guests in order to get an authentic impression of the cuisine. This is why they always pay their bills. Not just one person reviews the restaurant. Several critics are involved in the review in order to make a balanced and fair decision.

Consistency : This refers to both the consistency of the dishes served on repeat visits and the consistency across the menu as a whole. A restaurant must perform at a consistently high level on every visit and for every guest.
Value : This refers not only to price but also value for money. A restaurant may be expensive, but if the dining experience justifies it, it will be rated positively.
Where do the best award-winning chefs in Germany live?
The Michelin Guide is not the only restaurant guide that rates the best restaurants. Gault & Millau is a restaurant guide named after its founders Henri Gault and Christian Millau and is considered, alongside the Michelin Guide, the most influential restaurant guide of French origin. It awards the so-called Gault-Millau toques , which are considered a coveted award in haute cuisine alongside the Michelin stars.

Gault & Millau rates restaurants with one to five toques . The more toques a restaurant receives, the better the food. The chef's hats awarded only recognize the chefs and their culinary achievements, while the service, ambience and wine culture of the restaurant are described in the text of the guides.

Gault & Millau also distinguishes between red and black toques . Red toques are awarded to restaurants that are the best in their category. Black toques, on the other hand, are independent of the culinary style.
